Nothing happens when I pull on the knob under the seat?
Are there any tips/tricks to getting it off; when the cable will not unlatch for removal?

Sounds like the cable needs to be adjusted.
remove the two screws on the undercover and the undercover and you will see the end of the cable which is attached to the release lever.push toward the front of the Spyder and the catch will release the backrest. Adjust the cable to make sure it pulls the catch which releases th e backrest. 10 mins work !!!!!!!!!!!!
